Mom’s Peanut Butter Cookies

1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup shortening
1/2 cup peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 tsp. vanilla

additional sugar for rolling dough

Preheat oven to 375*F.

Cream shortening and peanut butter, add sugars and beat until fluffy. Add eggs, vanilla, and beat thoroughly. Add dry ingredients and beat until smooth.

Form balls and roll in sugar, then place on ungreased baking sheet. Flatten with fork, making criss-cross pattern. Bake 10 to 12 minutes. Do not overbake. Slightly underdone cookies are chewy.
